Read and
translate: What is quark and
sour cream?
True sour cream is a dairy
product made primarily of cream. It is very rich, high in fat, and quite adored
by many. A similar product is the French creme fraiche, and in Mexico,
the creamy dairy product that tops many Mexican dishes is called crema
Mexicana.
Adding bacteria derived
from lactic acid makes sour cream sour. This is similar to yogurt, but yogurt tends to use other bacteria to ferment
milk. The bacteria essentially culture the cream, causing it to become thick
and sour. Untreated cream is quite sweet, but sour cream has that added zip
which makes it so desirable to many.
However, since many are
watching their waistlines, sour cream in its original form is sometimes not
desirable. It contains from 15-20% fat, which can add a significant calorie
amount to products in which it is used. To counter this extra fat, some
versions are now either light or non-fat.
Light sour cream is made
with part cream and part milk. It often requires stabilizers in order to
provide the desired thickness. Nonfat varieties are made with nonfat milk and
normally need a significant amount of stabilizers like carrageenan and guar gum
in order to replicate the traditional thickness. Both products are less creamy,
though they may be just as sour. They can make excellent substitutes if one is
watching one’s waistline.
This mysterious cheese
variety is a weight loss favourite. But what makes quark so healthy and how do
you use it?
Quark is soft, fresh
cheese, that has a similar creamy texture to sour cream and a mild tangy taste.
Originating in Europe (the name essentially means "curd"), quark is a
versatile creamy cheese, useful in everything from cake recipes to dips and
low-fat spreads. Like low-fat yoghurt or fromage frais, quark contains less fat
than most creamy cheeses (although there is a full-fat version available),
making it an ideal choice for those on weight loss programs.
As for nutritional benefits, quark is a rich source of protein, it's high in
calcium which is essential for strong bones and teeth, vitamin A for good eyesight,
and B vitamins that support the nervous system.
How do I use it?Quark is
very versatile cheese to cook with and can be used in sweet or savoury dishes.
Use it as a substitute for full-fat sour cream in cheesecakes, dips and sauces.
Or it's delicious mixed with fresh herbs such as chives for a baked potato
topping. You can also use quark in cake recipes, as a healthy protein-rich
sandwich spread, or it makes an easy snack or breakfast mixed with nuts, seeds
and fruits.

Three fast Quark recipes
1.
Breakfast berry and almond quark
This healthy breakfast is high in protein, calcium and health-promoting
antioxidants.
1 cup quark
½ cup mixed berries
¼ chopped almonds
Raw honey
Mix all ingredients together and drizzle in a little raw honey.
2. Quark herb cream
This is delicious topping is great for baked and sweet potato, or serve it over
broccoli or cauliflower.
1 cup quark
1 tbsp sour cream
2 tbsp milk
1 tbsp parsley, finely chopped
1 tbsp chives, finely chopped
Mix all ingredients together in a small bowl. Then pour over cooked vegetables.
3. Quark, blueberry and chia seed
pancakes
3 organic eggs
¾ cup quark
1 ¼ cup self raising flour
Pinch of salt
1 tbs of honey
A handful of blueberries
1 tbs of chia seeds
Milk
Combine all dry ingredients together in a bowl. Then add enough milk until you
have a thick, smooth batter.
Pour mixture into frying pan with a little olive oil and cook until golden
brown.
Substitutes for quark
cheese

in place of ricotta in a lasagna
