Dagestan is the land of
snowy mountains, beautiful forests, fast rivers and
waterfalls. We have a great number of nationalities and their unique wonderful
culture and traditions, but we start to forget about it and change under the
influence of other cultures.
According to
the physical, geographical features the Republic of Dagestan is one of the
perspective regions of Russia for the development of the tourism and recreation
industry.
• The
aim of the project is to demonstrate and prove the natural
advantages of Dagestan.
• In
order to qualify as ecotourism, several criteria must be met. The most
important criterion is, minimal environmental impact, as people do not want to
damage the natural environment while they are trying to appreciate it.
Eco-tourism comes with intense socio-cultural effects. While visiting different
places, travelers get to know about local people and their cultures. It
develops a sense of much better conservation ethic in them.
•
The
first attempts to develop ecotourism in Russia were made in the USSR, though
after its disintegration the attempts stopped.
•
Currently, tourism development is a priority for
the republics of Eastern Caucasus, especially Dagestan.
In Dagestan, the mountainous tourism and
mountaineering has got rapid development, however, eco-tourism is weakly
developed.
Agro tourism is young

Last year I visited the village of Chirag. It`s located in the Agulsky
district of Dagestan. The village is small, but very beautiful. The population
is about the three hundred people. There are many beautiful landscapes. The
main activity of villager is sheep farming. Almost every family makes eco-
friendly sheep`s cheese. Of course being there I tried it. The taste is
unusual, but I liked it. The process of preparation turned out to be
interesting.
The main ingredient, of course is milk. Homemade cheese is very healthy
and rich in vitamins.
For its preparation, you need sheep`s milk is heated to thirty degrees.
Next add the leaven Then leave for thirty minutes? Curled mass is cut with
wooden knife, after it sinks to the bottom, and serum appear on the surface.
Then mass is compressed and formed into lumps that are placed in fabric bags.
Next, the cheese is laid on shelve, where it ripens for about a week.
Just imagine you are in the glade, it smells of fresh grass, birds
are singing. How wonderfully! You are eating freshly made organic cheese which
you produced yourself.
Now I`m in the ninth grade and it is time for me to think about choosing
a future profession. I haven`t decided exactly yet, but I would like to become
a technologist and produce sheep`s cheese. We produce sheep’s cheese
according to the recipes of our grandfathers, using only natural ingredients.
